Your organic fudge is wonderful. What is the inspiration for this treat? Since I’ve been making fudge for over 40 years, I wanted to make the finest, tastiest fudge I could with the best organic ingredients available. For example, I could use a standard organic chocolate. But I use the finest, fair-trade organic chocolate available, which is much more expensive for us. Gourmet Chocolate lovers definitely notice the difference.
What makes your fudge different from others and why are organic ingredients important to the taste of the product? Our fudge is different because of my unique, time-tested recipe and the way it is mixed, cooked, cooled and cut. Organic means that there are NO chemicals, additives, preservatives, pesticides, etc. It’s all natural AND made the old-fashioned way. We also use much less sugar than conventional fudge so the dark chocolate flavor comes through. We found natural, organic vegetable oils make the consistency rich and creamy without the saturated fat. Our fudge is actually healthier than most conventional chocolate bars.
Tell us a bit about where you make the fudge and who is involved in your business. We are located in Northern California in the Sierra Nevada foothills in the historical gold-mining town of Nevada City (population 2,800), about half way between Sacramento and Reno. We are a small, family-owned and operated business. At any particular time, we may have children and grandchildren helping us, depending on the demand. We hope to transition from a Mom and Pop company to a much larger, thriving company as we continue to expand and grow.
What other culinary delights do you enjoy and like to make for yourselves? One of our family’s favorites is when I make sushi at home, including a vegetarian version for our 16 year-old daughter. My wife, Reonne, prefers a large green salad any day of the week. But, I’m still a meat eater (organic only, of course), and one of my favorites is barbequed buffalo (organic only, of course), and one of my favorites is barbequed buffalo burgers with my own special home made barbeque sauce. I might market that too someday. For dessert, Rich Rainforest Dark fudge with a glass of red wine is heavenly.
